Discussing Dandelions

I was thrilled to read the Doctors’ cure for yellow jaundice in the late 1920s was dandelions. I am mortified when I see deadly chemicals being poured onto these delicious leaves. I know they can be a nuisance. Where I grew up in Pennsylvania Dutch Country, the sprouting of those leaves out of the ground indicated spring was near and the tradition of dandelion greens, hot bacon dressing, boiled potatoes and hard boiled eggs (from Easter) made my mouth water. Most of the time the bacon dressing was from a jar, Wos-Wit (brand) you can find it on Amazon. Since then I have been making it from scratch. My dad would go out to the fields and pick the greens before they flower, that is the key. Wash them and dry. We would then layer the boiled potato, cut-up hard-boiled egg, greens and then soak it all with the hot bacon dressing. That salad was a staple at our Easter dinner. So next Spring before you kill those delicate little tasty’s, dig ‘em up and give it a try. You won’t be disappointed, I might even share my mouth-watering bacon dressing recipe with ya.
